For Lazy Cooks

You know those days when you wake up tired and feel like you don't want to get out of your bed for the next 10 years but you're too hungry and need to feed yourself? That's almost every single day of my life.

Those are the days on which I need FOOOOOD (!) that's not only going to keep me energetic and motivated for hours but is also easy to cook. So here's a recipe that I came across recently which takes literally less than 15 minutes to make and is full of proteins and omegas and all that good stuff:

  • Toast 2 slices of bread.

  • Spread store bought guacamole/hummus/tzatziki or whatever spread you like. (Our personal favourite - Tzatziki because our adopted son is Greek)

  • Cover each toast with sliced smoked salmon. (Shane likes to fry it first. I like it as it is.)

  • Sprinkle a little bit of salt and pepper on your salmon.

  • Fry one egg per slice.

  • Sprinkle a teensy bit of salt and chilli flakes on your eggs.

Ta-daaaaaa!

Best breakfast ever. This is so good that Shane said (EVEN SHANE SAID!!!!!) that it could easily replace eggs and bacon from now on. Did I mention that SHANE thinks this could REPLACE EGGS AND BACON? Oh, and did I mention that this is HEALTHIER THAN EGGS AND BACON?
